Happy Birthday to ME and Happy Earth Day to the EARTH!!!!!
Happy Birthday to ME and Happy Earth Day 2021 to the EARTH!!!! Im so lucky to share a Birthday with Earth Day. On this day each year, I love to plant a tree. It's been my yearly tradition for the last 20 years at least. In my state this year, it snowed the last few days as part of a late cold front that moved through. so this year, my tree planting will have to wait until weekend when the temps are due to go back up. Im going to plant a Prarie Fire Crabapple in the backyard. As my last year in my 40's I will go out like I came in (planted pink roses the year I turned 40)- Prarie Fire Crabapples bloom BEAUTIFUL pink flowers and provide tasty crabapples most the winter for the birds to enjoy. I love planting, gardening and growing......just being in Nature is enough to restore my soul! If you are looking for a cause to donate to, "Trees for Tomorrow" out of Eagle River, Wisconsin is a great place to donate, and very near and dear to my heart. I am definitely going to be purchasing some seedlings of evergreens for my backyard from Trees for Tomorrow.

Air Fryer Cream Cheese Wontons!!!
Air Fryer Cream Cheese Wontons! Delicious and Easy to make!

INGREDIENTS
- 8 ounce cream cheese softened
- 2 Tablespoons green onion finely chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- wonton wrappers
- olive oil spray
INSTRUCTIONS

In a small bowl add the cream cheese, green onions, garlic powder and salt and beat until creamy.

Lay a wonton wrapper on a non stick surface. With your finger wet the edges of the wonton wrapper. Add about a teaspoon of the cream cheese filling and bring up each corner creating a star and seal tightly.

Spray the basket of an air fryer with olive oil spray. Add the wontons to the basket and lightly spray with olive oil. Cook at 370 degrees for 8 minutes. Check to see if they are golden and cook for an additional 2 minutes if needed.

Ever made Redbud Jelly? Its so easy and taste SOOOO GOOOD! You can substitue any wildflower (dandelion, violets etc) in this recipe. Give it a try if you've never experienced the flavor of some good ole homemade Redbud Jelly!!!!
*Go out and pick yourself a big bowl of redbud flowers.
*Rinse in a collander in your sink after soaking for 24 hours.

Jasmine is cultivated all over the world: As a garden or house plant; for its flowers, which are worn for their beauty and fragrance by women in Asia; for the creation of jasmine tea; and for the production of jasmine essential oil, which is made from the flowers.
Jasmine Essential Oil - Uses
In aromatherapy and fragrance, Jasmine has numerous uses: It is used for headache relief, mood elevation, stress relief, confidence, PMS, vitality and optimism. Typical methods of use include adding 8-10 drops to bath water, putting 3-5 drops in a diffuser or adding 3-5 drops to a massage oil blend.
Jasmine has been used since ancient times within the realm of fertility and childbirth. It is said to increase libido in both men and women. Ingredients
- 9 cups roughly chopped green leaf or romaine lettuce divided
- 1 large red bell pepper seeded and diced
- 1 large poblano or green bell pepper seeded and diced
- 1 12 oz frozen corn steamed and cooled
- 6 medium tomatoes 5 chopped and 1 sliced into wedges for garnish
- 1 medium red onion thinly sliced
- 2 1/2 cup shredded sharp cheddar cheese
- 1 lb bacon cooked and crumbled
- 4 cup roasted chicken roughly chopped
- 3 green onion thinly sliced
- 2 large hard boiled eggs cut into wedges

Instructions

In a large trifle or glass bowl layer in this order: ⅓ lettuce, ½ red pepper, ½ poblano pepper, ⅓ corn, ½ tomatoes, ½ red onion, 1 cup cheese, ⅓ bacon and ½ chicken. Drizzle with ½ cup prepared dressing.

Repeat, ⅓ lettuce, ½ red pepper, ½ poblano pepper, ⅓ corn, ½ tomatoes, ½ red onion, 1 cup cheese, ⅓ bacon and ½ chicken. Drizzle with ½ cup prepared dressing.

Top with the final ⅓ lettuce, ⅓ corn, ½ cup shredded cheese, ⅓ bacon and sliced green onion. Drizzle with 1/.2 cup dressing drizzling around the edge. Arrange egg and tomato wedges on top to garnish.

Chill for 4 hours, Serve with additional dressing on the side.

Homemade Empanadas Recipe
INGREDIENTS
For The Dough
- 3 cups flour
- 1/2 tsp salt
- 1/2 cup cold butter cubed
- 1 large egg
- 3/4 cup cold water
For The Filling
- 2 tbsp olive oil
- 1 medium red onion
- 6 oz. boiled diced potato
- 1 tbsp tomato paste
- 1 jalapeno
- 12 oz. ground beef
- 1/2 tsp salt
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 cup frozen peas
- 1 tbsp chopped green onions
- 1 tbsp chopped fresh parsley
- oil for frying
INSTRUCTIONS
For The Dough
-
Add flour, butter, and salt to a food processor fitted with a blade attachment. Pulse a few times until the butter is the size of peas.

Add egg and cold water to the food processor. Pulse just until ball of dough forms.
-
Form the dough into a flat round disk and wrap in plastic wrap. Refrigerate for at least 1 hour.
For The Filling
-
Meanwhile you can get started on your filling. Heat olive oil in a large skillet over medium high heat. Add in onion and jalapeno and saute for 2-3 minutes or until softened and golden brown.

Add ground beef and brown until no longer pink, 4-5 minutes.
-
Add in salt, chili powder, paprika and cumin.
-
Stir in tomato paste. Sauté for an additional 2 minutes.
-
Remove from heat and allow to cool slightly. Add in frozen peas, boiled potato, fresh parsley, and green onion.
-
Roll out dough to 1/4 inch thickness. Cut into circles about 5 inches in diameter using a ring cutter or small bowl. Alternatively divide into 12 small balls of dough and roll into individual circles.

Place filling (about 1/4 cup) on each circle and fold in half, crimp the edges with a fork.
-
Add oil to a deep pan or pot so that it reaches 1 inch in depth. Heat oil to between 350 and 375 degrees.

Fry in batches, 3 at a time, 2-3 minutes per side or until golden brown.

Serve immediately with salsa or sour cream for dipping!

What are Chakras????
Chakras are circles of energy. Energy flows through your body via energy pathways called meridians. So your chakras are simply energy hubs where your meridians meet. Imagine a road system with lots of intersections (or roundabouts). The car is like your energy which travels along the road (your energy pathway — meridians) and the intersections or roundabouts are like your chakras.
The seven chakras are the main energy centres of the body. You’ve probably heard people talk about “unblocking” their chakras, which refers to the idea that when all of our chakras are open, energy can run through them freely, and harmony exists between the physical body, mind, and spirit. Chakra translates to “wheel” in Sanskrit, and you can imagine them like wheels of free-flowing positive energy.
In this beginner’s guide, we’ll introduce how to identify when any of your seven main chakras are out of balance. We’ll also summarize the defining characteristics of each chakra, from root to crown.
1. Root Chakra (Muladhara)
The root chakra represents our foundation. On the human body, it sits at the base of the spine and gives us the feeling of being grounded. When the root chakra is open, we feel confident in our ability to withstand challenges and stand on our own two feet. When it’s blocked, we feel threatened, as if we’re standing on unstable ground.
Location: Base of spine, in tailbone area
What it controls: Survival issues such as financial independence, money, and food
Mantra: “I can’t grow from an unsteady foundation.”
Colour: Red
Element: Earth
Stone: Hematite
When it develops: 1-7 years old
2. Sacral Chakra (Swadhisthana)
The sacral chakra helps inform how we relate to our emotions and the emotions of others. It also governs creativity and sexual energy. Those with a blocked sacral chakra could feel a lack of control in their lives.
Location: Lower abdomen, about 2 inches below the navel
What it controls: Your sense of abundance, well-being, pleasure, and sexuality
Mantra: “I always honor others but not before myself.”
Color: Orange
Element: Water
Stone: Tiger’s Eye
When it develops: 8-14 years old
3. Solar Plexus Chakra (Manipura)
The third chakra, the solar plexus chakra, speaks to your ability to be confident and in control of your life. Think back to the last time you had butterflies or felt a pit in the stomach: That’s the Manipura chakra at work. If your solar plexus chakra is blocked, you might feel overwhelming amounts of shame and self-doubt. Those with open sacral chakras are free to express their true selves.
Location: Upper abdomen in the stomach area
What it controls: Self-worth, self-confidence, and self-esteem
Mantra: “Self-love starts when I accept all parts of myself.”
Colour: Yellow
Element: Fire
Stone: Amber
When it develops: 15-21 years old
4. Heart Chakra (Anahata)
The heart chakra is the bridge between the lower chakras (associated with materialism) and the upper chakras (associated with spirituality). As the name suggests, this chakra can influence our ability to give and receive love—from others and ourselves. Someone with a blocked heart chakra will have difficulty fully opening up to the people in their life. If someone’s heart is open, they can experience deep compassion and empathy.
Location: Centre of chest, just above the heart
What it controls: Love, joy, and inner peace
Mantra: “When I love myself, loving others comes easily.”
Colour: Green
Element: Air
Stone: Rose Quartz
When it develops: 21-28 years old
5. Throat Chakra (Vishuddha)
The throat chakra gives voice to the heart chakra and controls our ability to communicate our personal power. When it’s functioning at full capacity, it allows us to express ourselves truly and clearly. Someone with a blocked throat chakra will feel like they have trouble finding the words to say how they truly feel.
Location: Throat
What it controls: Communication, self-expression, and truth
Mantra: “I speak my truth, always.”
Colour: Light Blue/Turquoise
Element: Sound/Music
Stone: Aquamarine
When it develops: 29-35 years old
6. Third-Eye Chakra (Ajna)
As we move up the body, we’re getting closer to communion with the divine. The third-eye chakra controls our ability to see the big picture and connect to intuition. Think of it as the eye of the soul: It registers information beyond the surface level. Visions and intuitive hits are not uncommon for someone with an open third-eye chakra.
Location: Forehead between the eyes (also called the Brow Chakra)
What it controls: Intuition, imagination, and wisdom
Mantra: “I am open to exploring what cannot be seen.”
Colour: Dark Blue/Purple
Element: Light
Stone: Amethyst
When it develops: 36-42 years old
7. Crown Chakra (Samsara or Sahasrara)
The crown chakra, the highest chakra, sits at the crown of the head and represents our ability to be fully connected spiritually. When you fully open your crown chakra—something very few people ever do!—you’re able to access a higher consciousness.
Location: The very top of the head
What it controls: Inner and outer beauty, spiritual connection
Lesson: “I am a vessel for love and light.”
Colour: Violet/White
Element: Divine Consciousness
Stone: Clear quartz
When it develops: 43-49 years old.

Jalapeño Poppers Recipe with Bacon is a spicy hot, creamy cheese with crumbled pieces of bacon stuffed in a jalapeño and baked to perfection! The perfect any day of the week appetizer!
INGREDIENTS
- 10 jalapeños
- 8 ounce cream cheese softened
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cup shredded cheddar cheese
- 1/2 pound bacon cooked and crumbled
- 1/4 cup green onions sliced
INSTRUCTIONS

Preheat the oven to 400 degrees. Wearing gloves, slice each of the jalapeños in half lengthwise and use a spoon to remove the seeds and veins.

In a medium sized bowl, combine the cream cheese, garlic powder, salt, pepper, cheddar, bacon, and green onions.

Spoon the mixture evenly in the jalapeños and place on a baking sheet. Bake for 20 minutes or until the jalapeños are tender.
