Pinwheel Pizzas!!!!
Pinwheel Pizzas!!!!
Pizza pinwheels are a super easy, family-friendly lunch or dinner. They're made with soft pizza dough and your favorite toppings rolled up then sliced into rounds. Once they're baked, they become cheesy and delicious bites that your whole family will love.
INGREDIENTS
- 1 pizza dough (see notes)
- ½ cup pizza sauce
- 3 ½ ounces thinly sliced ham
- ½ cup pineapple tidbits
- 10 ounces shredded mozzarella
- 2 tablespoons minced chives (optional)
INSTRUCTIONS

Preheat your oven to 425 degrees.

Form the pizza dough into a rectangluar shape. The backside of an 18"x13" baking sheet works great for this.

Spread the pizza sauce over the dough, leaving ½ inch without the sauce at one of the short ends. Add the ham, pineapple, and mozzarella over the sauce.

Roll the pizza, starting at the short end with the sauce right to the edge. Use the edge without the sauce to seal the roll, pinching the dough together a little, if necessary.

Cut the pizza roll into 8 equal pieces. Place the pieces on a non-stick or parchment paper-lined pan. Bake for 20 minutes, until the pizza dough is cooked. Sprinkle the top with some minced chives, if using.

Beef Enchiladas!!!!
Simple homemade Beef Enchiladas are full of Mexican comfort food flavors. This recipe includes a quick homemade red enchilada sauce and an easy ground beef filling that’s ready for the oven in 30 minutes.
Ingredients
Red Enchilada Sauce
- 2 tablespoons vegetable oil
- 1 tablespoon cornstarch
- 4 tablespoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried Mexican oregano
- 2 cups vegetable broth
Ground Beef Filling
- 1 1/2 pounds lean ground beef
- 1 white onion diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces diced green chiles
Enchiladas
- 12 corn tortillas
- 2 tablespoons vegetable oil for frying
- 3 cups shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
Instructions
Make the enchilada sauce:

Heat vegetable oil in a medium saucepan over medium heat. Whisk in cornstarch, chili powder, garlic powder, salt, cumin, and oregano. Pour in vegetable broth and bring to a simmer until thickened, about 2-3 minutes. Remove from heat and set aside.
Make the ground beef filling:

Heat a large skillet over medium-high heat. Add in ground beef and onion and season with salt and pepper. Cook until ground beef is browned and cooked through, about 7 to 10 minutes. Drain any excess fat. Stir in green chiles.
Assemble enchiladas:

Preheat oven to 350 degrees and lightly grease a 9x13 pan with nonstick cooking spray. Spread 1/2 cup of enchilada sauce in the bottom of the pan.

Heat 1 tablespoon of vegetable oil in a small skillet over medium heat. Working one at a time, fry tortillas in oil until soft. DO NOT CRISP.

Dip each tortilla into the enchilada sauce to coat and set on a plate. Fill with a scoop of the ground beef filling and top with a generous pinch of cheese. Roll and place into the prepared 9x13 pan. Drizzle remaining sauce over enchiladas in the pan and top with remaining shredded cheese. Bake, uncovered, in the preheated oven for 20-25 minutes until cheese is warm and bubbly. Top with chopped cilantro and serve hot.

The Gypsy Homestead "Coconut Brownies"!!!!
Coconut Brownies
Ingredients
Brownie
- 1 cup all-purpose flour plus 1 teaspoon flour
- 1/2 cup cocoa powder
- 1/4 tsp salt
- 1 1/2 cup granulated sugar
- 3/4 cup salted sweet cream butter melted and cooled
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup mini semi-sweet chocolate chips
Coconut
- 2 1/2 cup sweetened coconut flakes
- 2/3 cup sweetened condensed milk
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
First Brownie Layer

Preheat the oven to 350°F. Line an 8x8 baking dish with parchment paper and spray lightly with nonstick spray. Set it aside.

In a medium-sized mixing bowl whisk together the 1 cup of all-purpose flour, cocoa powder, and salt. Set it aside.

In a small bowl, stir together the mini chocolate chips and the teaspoon of flour. Set it aside.
-
In a medium-sized mixing bowl whisk together the melted and cooled butter, granulated sugar, eggs, and vanilla extract.
-
Using a wooden spoon, stir in the flour mixture. Stir just until the mixture is well combined.
-
Fold in the mini chocolate chips.
-
Evenly spread 1/2 of the brownie batter into the prepared baking dish.
Coconut Layer
-
In a small mixing bowl, stir together the coconut flakes, sweetened condensed milk, vanilla, and salt. Stir until the ingredients are well combined.

Using a silicone spatula or an offset spatula, evenly spread the coconut filling carefully over the top of the bottom brownie layer.
Second Brownie Layer
-
Spread the remaining 1/2 of the brownie batter over the top of the coconut filling.

Bake for 35 to 40 minutes.

Allow the brownies to completely cool before slicing 4 across and 4 down servings, about 2 in x 2 in squares.

Awesome 7 Layer Dip is an addicting creamy dip that includes all of your favorites, like guacamole, refried beans, and sour cream! You will be amazed how simple it is to put together such an incredibly delicious dip!
INGREDIENTS
- 1 16 ounce can refried beans
- Homemade Guacamole
- 1 cup sour cream
- 2 Tablespoons Homemade Taco Seasoning
- 1 cup salsa
- 1 cup Colby Jack cheese shredded
- 1/2 cup sliced olives
- 1/4 cup cherry tomatoes sliced
- 2 green onions sliced
INSTRUCTIONS

In a 8x8 inch dish layer the refried beans, and guacamole. In a small bowl mix the sour cream with the taco seasoning and layer on top of the guacamole. Then layer salsa on top.

Top with shredded cheese, olives, tomatoes, and green onions.
