Harmony of mind and spirit. Clear Quartz or Emeralds are helpful today as we close out an unusually intense month. The Quartz reduces confusion and helps with decision making. The Emeralds will soothe emotions that may be running too high, especially with the Moon still traveling through Cancer. It's a day to go inward and release since the Moon's in her Void of Course phase for the day. You'll need to begin projects on another day - preferably after the New Moon on October 6th/7th. So, do only the tasks in front of you and let the old memories flow. Then, let them go.
We can get wrapped up in the opinions of others under a Cancerian Moon. The lesson is - they're just opinions and not who you really are. This one is a WINNER
For when you absolutely want pizza but not all the carbs
Crust
1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated parmesan cheese
Topping
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
toppings - pepperoni, ham, sausage, mushrooms, peppers
Garlic powder
Preheat oven to 350.
Lightly spay a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.
Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 8-10 minutes, until cheese is melted.

Bacon Wrapped Cream Cheese Stuffed Chicken Breasts
Ingredients:
2 Boneless skinless chicken breast
4 tablespoons cream cheese
1/4 cup Pepper Jack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon
Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4" thick.
Mix together softened cream cheese, chopped green onions and shredded Pepper Jack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.
Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.
One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.
Place on baking sheet and back for 30 minutes at 375 degrees F.
Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.

If you find you're getting very irritated step back. Moon in Cancer is ultra sensitive to noises and distractions. Work alone or in a quiet environment, if possible, today.

KETO CREAMY CHICKEN AND MUSHROOM CASSEROLE
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4 servings
INGREDIENTS
1 pound chicken tenderloin
1/2 pound mushrooms thickly sliced
2 tbsp butter
2 tbsp olive oil
2 cloves garlic crushed
1/4 cup fresh parsley chopped
2 tbsp fresh thyme leaves
salt and pepper
1/2 cup chicken stock
1/2 cup heavy cream
1/4 cup sour cream
INSTRUCTIONS
Heat half of the butter and half of the olive oil in a heavy skillet.
Season the chicken tenders and then sear in batches until browned on all sides. Remove from skillet and set aside.
Add the rest of the butter and oil to the skillet and cook the mushrooms until they are browned and crispy.
Add the garlic, herbs, and chicken stock and deglaze the pan, scraping all of the good stuff from the bottom of the pan.
Add the cream and sour cream and simmer until sauce starts to thicken. Do not boil, as the cream could split.
Return the tenderloins to the pan and toss through the sauce. Cook for five more minutes.
Store, covered, in the refrigerator for up to 5 days.

Broccoli Cheddar Soup!!!!

BROCCOLI CHEDDAR SOUP
4 Tablespoons butter
1 onion, chopped
4 Tablespoons flour
2 cups chicken or vegetable stock
1 pound chopped broccoli
2 cups milk
1 cup shredded cheddar, plus more for garnish
Saute onion in butter until translucent. Stir in flour until a thick paste forms. Add stock and simmer until thickened. Add broccoli. If only making soup, use raw, fresh broccoli and simmer for at least 10 minutes until tender. If making baby food, it’s best to steam all of the broccoli together and then add cooked broccoli to soup just to warm through. Add milk and cook just a minute or two to warm through. Puree soup with blender or in a food processor or blender. Stir in cheese. Garnish with additional cheese and any extra broccoli.

Funeral Potatoes (I didn't make up the name, lol)
1 (32 oz) bag frozen hash browns (the chunky kind, not the shredded kind, I think they’re called “Southern style”)
2 (10 3/4 oz) cans condensed cream of chicken soup
2 cups sour cream
1 cup grated cheddar cheese
1/2 cup butter, melted
2 cups crushed corn flakes (I have had these with crushed up crackers on top too)
2 tablespoons butter, melted
Preheat oven to 350. Put hash browns into a greased 9 x 13″ pan. Combine soup, sour cream, cheese and 1/2 cup melted butter. Gently blend into hash browns. Combine corn flakes and 2 tablespoons melted butter. Sprinkle on top of potatoes. Bake for 30 minutes or until heated through.
